Torrevieja’s White Gold: The Salt That Built the City

Long before tourism defined Torrevieja, salt did. It was the economic foundation that shaped the city’s development.
When lagoons became capital
After the 1829 earthquake, reconstruction was closely linked to salt production from the Torrevieja and La Mata lagoons. Export activity stimulated port and urban growth.
Production and trade
Throughout the 20th century, output reached hundreds of thousands of tonnes annually. In the early 2000s, production exceeded 700,000 tonnes per year, much of it exported across Europe.
Business opportunity
In 1897, José Guardiola y Comas secured the concession to operate the salt works. Control over production and logistics provided significant commercial advantages and illustrates the economic opportunities tied to the industry.
Hard work behind the white crystals
Salt harvesting required intense physical labour under high temperatures. Manual collection and transport created demanding working conditions.
Salt and… herring
Torrevieja exported salt to countries where salted herring is a culinary staple. Yet the city never became a fish-salting centre itself. A mild irony: with so much salt, it could have offered not only beaches, but its own signature herring.
Tradition and recognition
Today, salt-related crafts form part of the city’s cultural identity. The Municipal School of Salt Crafts promotes these traditions and supports efforts toward potential Protected Geographical Indication recognition.
